1 cup uncooked brown rice
2 cups water
1 tablespoon olive oil
1/2 cup onion, diced
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
1 (4oz) can diced green chili peppers
1 (14.5oz) can Kuner’s® Diced Tomatoes
1 (15oz) can Kuner’s® Whole Kernel Corn, drained
1 teaspoon garlic powder
1/4 teaspoon cumin
1 teaspoon dried sage
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1 tablespoon lime juice (fresh or bottled)
1 (15oz) can Kuner’s® Black Beans, drained and rinsed
1 cup vegetable broth


In 2-quart saucepan, cook rice in water as directed on package.

Meanwhile, in 12-inch nonstick skillet, heat oil over medium heat. Stir in onion, bell peppers and chilies. Cook 5 minutes or until slightly tender, stirring occasionally. Stir in all remaining ingredients. Cook until mixture boils. Reduce heat. Simmer uncovered 20 minutes or until mixture thickens, stirring once or twice. Serve over hot rice.
