Place all ingredients except parsley in food processor. Cover; process 20 to 30 seconds or until smooth. Add 1/4 cup parsley. Cover; pulse 4 or 5 times or until parsley is chopped. Spoon into serving bowl; sprinkle with chopped parsley.
Serving Suggestion: Serve this Greek-inspired dip with pita chips, bread or crackers. It can also be used as an accompaniment for grilled meats. It is typically made with pureed baked potatoes. Substituting the canned beans makes it a quick and easy recipe.
