In large nonstick skillet, cook bacon and oil on medium-high heat 3 minutes or until bacon starts to crisp, stirring frequently. Add potatoes and onion. Cook 7 to 8 minutes or until slightly softened and browned, stirring frequently. Add all remaining ingredients. Cook and stir 2 minutes or until kale is wilted. Reduce heat to medium-low. Cover and cook 10 to 15 minutes or until all vegetables are tender, stirring 2 or 3 times.
Tip: This is a wonderful side dish for almost any meat. It would also be a great main dish – just serve larger portions. For a vegetarian dish, omit the bacon and add another tablespoon of vegetable oil.
