Heat oven to 350°F. Spray cookie sheets with cooking spray. In food processor, combine beans and milk. Cover; process 30 seconds or until smooth. In large bowl, combine beans, 1/2 cup granulated sugar, the brown sugar, oil, egg and vanilla. Beat with electric mixer on medium speed until smooth and creamy. Add flour, baking powder, baking soda and salt. Beat with electric mixer on low speed until mixed. Beat on medium speed until smooth. By hand, stir in oats, cherries and walnuts.
Using 2 level tablespoons of dough or 1-ounce cookie scoop, spoon dough on cookie sheets 2 inches apart. Sprinkle tops with a little of the remaining granulated sugar. With fingers, flatten slightly to about 1/2 inch thick.
Bake 9 to 12 minutes or until light golden brown and set. Cool on cookie sheets 2 minutes. Remove to cooling racks. Store loosely covered.
Tip: You can substitute dried cranberries, dried blueberries or other dried fruit for the dried cherries.
