Ingredients

1 (15oz) can Kuner’s® Whole Kernel Corn, drained
1 tomato, seeded, diced
1 avocado, peeled, cubed
3 green onions, sliced
1/4 cup pitted Kalamata olives, quartered
1/4 cup pickled jalapeno peppers, chopped
2 tablespoons chopped fresh oregano or 1 teaspoon dried oregano
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
1 head butter or bibb lettuce

Preparation:

In large bowl, mix all ingredients except lettuce. If desired, cover salad and refrigerate 1 hour to chill before serving. To serve, line large platter or individual salad plates with lettuce. Fill leaves with salad.
